Italian cooking is a graceful dance of carefully chosen spices, the ripest tomatoes, the most tender cuts of meat and garlic - if you so choose. That's the beauty: there's room to perfect it for your tastes, a way to make it your own home cooking recipe. People sometimes get caught up in the preciseness of recipes, whether they're in their local newspaper or handed down for generations and usually, it's simply a matter of taking that recipe and personalizing it. Who says you can only add one clove of garlic or that you can't include mushrooms in the same recipe you've included bell peppers in?

Some of the most loved dishes were borne of an ingredient shortage or a combination of unlikely sauces, vegetables and spices. Often, an Italian cooking recipe is as much of what's not added as it is following it to the letter. Lasagna is an American favorite, but how many variations are there? Some cooks like carrots in the sauce for a sweeter flavor while others swear by cottage cheese. Many like the finely shredded mozzarella, while still; there are others who wouldn't dream of making this dish without sausage in the sauce. That's what Italian cooking is: recipes that include a bit of personal creativity. It's about what your wife prefers or what the kids really like.
